Chicken Linda Sue

Amount Measure Ingredient -- Preparation Method

4 boneless skinless chicken breasts
(pounded)
4 tablespoons cracked black pepper
1 cup sliced mushrooms
1 tablespoon minced garlic
1 onion -- thinly sliced
1/2 cup olive oil
1 cup white wine
1 stick butter (cut into tablespoon portions)
Spinach Bacon Stuffing:
1 onion -- chopped
2 ribs celery -- chopped
2 cups frozen spinach -- thawed
1/2 pound bacon -- fried crisp
1 loaf day-old bread -- torn into cubes
1 quart chicken stock
1/2 pound butter
3 tablespoons poultry seasoning

In saucepan, combine onion, celery and 1/2 pound butter. Saute until tender. Add chicken stock, seasoning, bacon and spinach; mix with bread cubes until wet.
Place in baking dish and bake at 350 F. for 1 hour or until golden brown. When stuffing is done, prepare chicken as follows:

Take pounded chicken, skin side up. Sprinkle each breast with cracked pepper and press into chicken. Place chicken in medium hot skillet and cook each side for about 3 minutes. Turn frequently until chicken is done. Remove chicken and place over a portion of spinach stuffing, then place mushrooms and onions in skillet and saute until tender. Add wine and simmer 2 minutes. Add garlic and saute 1 minute.
Add butter all at once and whisk butter into sauce. Spoon over chicken and stuffing.

Serves 4

I'm with TheLemonSong... Sounds good..Prep time and also lots of ingredients...But I like chicken.. I will try it..
