Tropical Paradise Muffins

Preheat the oven to 400°F and prepare the pan

In a large bowl, blend well:
3 large eggs
1/2 cup butter, melted and cooled
1 tablespoon vanilla or coconut extract
add:
1 cup mashed very ripe bananas
1 cup mashed ripe papaya or mango
1 can (8 oz) crushed pineapple in juice, undrained
1 tablespoon grated lemon peel

in a large bowl, sift together:
3 cups all-purpose flour
1 cup packed brown sugar
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon nutmeg
add:
1 cup rolled oats
1 cup shredded coconut
1/2 cup mini-chocolate chips
1 cup chopped toasted pecans or macademia nuts

combine the two mixtures just enough to blend. Spoon the batter into the prepared pan. Sprinkle tops generously with cinnamon sugar.
bake for 20 to 25 minutes.
Remove the muffins from the pan and cool on a wire rack.
Serve warm.
 
Yummy sounds good. Question on it, wondered if you could put applesauce or something else instead of the mango . Although I do like mangos and papaya, I don't usually have them on hand,

just try, but why not?
I always leave the coconut out, because I don't like it and it still tastes wonderful..

but in Germany it's not difficult to get mangos at almost every supermarket or food store..
