Escarole

I always thought you threw this escarole in a salad. Lady at th store informed me to boil it for few minutes until wilted and then drain. Throw garlic in wooden bowl and escarole on top. Drizzle with olive oil. Said delicious. She sure looked healthy. Do any of you eat this and how?

I've seen it tossed with olive oil, grilled, and served with balsamic vinegar.

I use it in escarole pies. I put a recipe for it in the ethnic forum I think? It's a very italian recipe, that many didnt respond to , but maybe you will like it.
