Want to send my sweetie a homemade apple pie... could probably get there in 2 days priority mail. Can I do this? Should I bake then freeze? suggestions?

I have only ever done overnight courier with food. We make sure it is frozen and then packed in a cooler with freezer bags as added protection. I wouldn't do the two day route.
