I dry cayennes, of course, but I also have jalapenos, and habaneros ripening. I'm sure they can be dried in my dehydrator, but my question is, should they be? Is there value in these peppers dried? Anyone doing it?

Thanks

What about bell peppers? Anyone dry them? What kind of uses do you get out of them?

You can dry or freeze bell peppers. I've also frozen whole jalapenos but the are a little softer when defrosted.

I dry just about any kind of pepper. But i really like the milder, meatier peppers (bell, poblano) best when I put hubby to work. He roasts (either under the broiler or over coals), peels and seeds them, then I package and freeze them. Oh, yummyumm!
