Is that what they call Potato Candy? My brothers girlfriend was talking about it last Thanksgiving.....she's from Ohio and was visiting.....I'd never heard of it and lo and behold a few weeks before Christmas I received a package in the mail and she'd made me a batch. Tasted like fudge to me.....but the texture was different.

QUICK MASHED POTATO FUDGE
3 sq. bitter chocolate
3 tbsp. butter
1/3 c. mashed potatoes
1/8 tsp. salt
1 tsp. vanilla
1 lb. powdered sugar
Melt chocolate and butter over hot water. Then add mashed potatoes, salt and vanilla. Mix thoroughly and blend in powdered sugar. Knead until smooth. Press into 8 inch square pan. Let it cool and then remove and cut into squares
