Does anyone know what the american equivalent of the leafy green vegetable in england that they call "spring greens" is?

I think that would be what we call "Spring Mix", or "Mesclun". Basically, it's a mix of various baby lettuces.

I would guess it's either lettuce, or cabbage. My husbands family grew cabbage that was much like our leaf spinach.

Spring greens are a type of cabbage. Very dark green leaves and fleshy stems, which can be fibrous. The secret is to eat only the inner leaves and to plunge into boiling water and cook for however long it takes to allow a knife to penetrate the leaves - I find 10-12 minutes is ample.

I forgot to mention - whenever you eat deep fried seaweed in Chinese restaurants in the UK - it's just spring greens, deep fried!:)
