Spekulatius - traditional spicey christmas cookie

just make a simple shortcake:

350 g flour
100 g almond flour (or ground almonds)
200 g Butter
150 g sugar
2 eggs

1 vanilla bean, scratched out (? you know what I mean?)
cinnamon, clove powder, mace
very little salt

knead together COLD , place cool again and let rest
roll out at about 2-3mm ( ca 0,12inch )

in Germany you can buy special "Spekulatiusrolls" to form the cookies....

but plain cookie formers should work, too... :mrgreen:

bake 390°F for about 10-12min

Those are beautiful Cara, and the recipe sounds delicious...My mom just sent me a few cookie cutters (I couldn't find any here!) and I am itching to make lots of cut out cookies, so I will be copying and pasting this recipe :) Thanks for sharing it.
 
they are delicious... ;o)
but I must admit, I never tried them myself, because you can buy them ready and that is much easier... ;o)
