It IS a shame that so many wines were lost but I think I see a marketing opportunity. If so many vintage wines turned to vinegar, well, you can cook with that. I'm no expert on wine whatsoever but wouldn't different varieties of wine-turned-vinegar have unique flavors? I'm just taking a shot in the dark, here.
