REC: Ooey Gooey chocolate pie

This stuff is really bad! If you like cookies and brownies that are still a little gooey, you will love this. The crust is not hard or crusty at all. I could sit and eat the whole thing by myself. But, unfortunately, everyone in the house loves it too:mrgreen:


Ooey Gooey crust
1/2 cup margarine, softened
1 cup sugar
1 egg
1 tsp vanilla extract
1-1/4 cups a/p flour
1/2 cup Cocoa
3/4 teaspoon baking soda
1/4 teaspoon salt
Beat butter, sugar, egg and vanilla in large bowl. Stir together flour, cocoa, baking soda and salt; beat into butter mixture. Press into a greased 9" pie plate bottom and up sides.
Heat oven to 375°F. Bake for 20 minutes. Let cool. Press down around the center,with the back of a spoon or fork, but, not the sides. Make filling.

Chocolate filling:
1-1/4 cups sugar
1/3 cup Cocoa
1/3 cup cornstarch
1/4 tsp salt
3 cups milk
3 egg yolks, slightly beaten
2 Tbls butter or margarine
1-1/2 tsps vanilla extract

Stir together sugar, cocoa, cornstarch and salt in medium saucepan; gradually stir in milk. Cook over medium heat, stirring constantly, until mixture boils; boil and stir 1 minute.

Remove from heat; gradually stir about 1/2 cup hot mixture into beaten egg yolks. Return all egg mixture to chocolate mixture in saucepan. Cook over low heat, stirring constantly, just until mixture comes to a boil. Remove from heat; stir in butter and vanilla. Pour into pie crust; press plastic wrap or wax paper directly onto surface. Refrigerate about 3 hours or until cool.
