What's the difference between a Brunswick stew and an Irish stew? Or a burgoo and a bouillabaisse? Read on.
• Bouillabaisse: a French stew that uses fish and shellfish as well as tomatoes and onions; often seasoned with garlic and saffron.
• Brunswick stew: a dish that originated in Brunswick County, Va., and originally was made with squirrel and onions.
• Burgoo: often called Kentucky burgoo (with the emphasis on the first syllable), a thick stew that can include a variety of meats and vegetables; traditionally made with rabbit and squirrel.
• Cioppino: a spicy Italian stew that usually includes tomatoes and a variety of fish and shellfish.
• Irish stew: a long-cooking stew traditionally made with lamb or mutton as well as potatoes and carrots; sometimes contains beef or lamb and beef.
• Mulligan stew: a stew made from whatever is available; generally includes a meat, potatoes and other vegetables.
