Here is a really good side dish for any meat you are serving. This is a real biggie at the grill. I hope you all enjoy it.

5 lbs of poatao's peeled and chopped 1/4 cubes
1 large yellow onion diced
1 bunch green onions diced
salt to taste
ground black pepper to taste
1 1/2 sticks butter unsalted
5-6 cloves garlic chopped finely
1/2 cup Tony Chachere's creole seasoning to taste

Place potato's in a pot. Put enough water to cover the tops of the potato's.
Add the remaining ingredients and bring to a full boil. Turn the fire down and slow cook the potato's until all the water has boiled out. Do not scorch the bottom with a high flame while you are slow cooking. Stir often so it does not stick. If it drys out before potato's are done, add a little bit of chicken broth. You can add as much seasoning as you desire to make it spicier. This goes good with Pork Tenderloin or Roast.
