Potato Soup

This recipe was given to me by my b/f sister.

POTATO SOUP
3 medium potatoes, peeled and diced
1 medium onion, minced
2-1/2 cups boiling water
2 tbsp butter
2 tbsp flour
3 cups milk
dash pepper
2 tsp salt
2 Tbsp fresh chives, chopped

Boil potatoes and onion in water for 20-30 minutes. In large skillet, melt butter and stir in flour, salt and pepper. Simmer and gradually add milk stirring till thickened. Add flour mixture to potatoes and onion and heat thoroughly. Sprinkle chives on top when ready to serve.
 
Add a little corn and then either clams or smoked salmon and you've got a nice chowder.

Finally got around to making this DELICIOUS soup! :chef:

I loved it as did my DH - and he's not much for soups. I have never "thickened' milk before and was surprised how long it took. (over a half hour - is that normal?) Anyway, worth it.

Thanks so much for sharing, I'll definitley be adding this to my list of favorite things to make on cold rainy days! :-p
