OK, I admit it... I was born in the Mid-South, and lived there and in the East all my life. Back there the beef cattle do not have tri tips.

I moved to the west and apparently out here they do. What is a tri tip, and how do you cook it?
 
We are now beginning to have tri tip in our food stores. I'd never heard of it until my dd lived in Ca and I visited there. Now I keep some in the freezer most of the time.
 
Thanks for the tip... (pun intended) I cooked a packaged one from Costco last night.
It was teriffic. Maybe a bit too salty, but the flavor, tenderness and overall goodness was way above expectations.
