Definitely in favor of cheaper cuts -- couldn't agree more about flavor!
I'm blue enough as well, just happened to first be introduced to the brie version and that's all I've ever really tried. Was an easy and quick meal for one back in my single days, starting, as you suggest, with a bit of frozen steak. Plunk a generous amount of butter in the pan, stir the steak slices around just enough to get them hot (but still rare for folk like me), then plunk on top some slices of brie and let those melt a wee bit before sliding it all onto one's Bread Of Choice. Salt. Lots of fresh pepper. Bloody yummy.
