REC: Raw Tomato Sauce for Pasta

This is a simple, excellent raw sauce for pasta, perfect when you have a load of tomatoes to use up, and it's 100% vegetarian (vegan, even).

TOMATOES WITH MARJORAM

2 Pounds Ripe Tomatoes
1/4 to 1/3 Cup Olive Oil
1 Tablespoon Finely Chopped Fresh Marjoram
2 Cloves Garlic, Crushed or Minced
Salt & Freshly Ground Pepper

Seed tomatoes and chop fine; drain in colander for 30 minutes.

Mix olive oil, marjoram, garlic in bowl; add salt and pepper to taste. Mix in drained tomatoes.

Mix sauce with chunky spiral pasta, such as gemelli or rotini.
 
We enjoy a very similar pasta recipe, we use fresh basil leaves, which grew gloriously on our window sill, unlike the majoram which we planted along side however refused to come out... I need to try it your way when I come across some fresh majoram at the market...
Either way, basil or majoram (I am sure oregano will be just as good, too), this is a perfect treat during this high ripe tomato season!!:chef:
 
I think basil would be great with this, but I would mince it very fine to get it will mixed in with the tomatoes.

It's a very refreshing summer dish.
