Jerk chicken

i tried jerk chicken for the first time a few weeks ago. i really liked
it i cheated and just used a-1 jerk marinade. does anyone have any
secrets to making jerk chicken? is the store bought marinades just
as good?

It's easy to make on your own, and, like Andy said, there several threads discussing it and providing recipes.

If you don't want to make your own jerk paste, Walkerswood makes a good one, which probably will taste a bit more authentic than A1. They sell it in my supermarket near the Goya stuff.

If you use real Jamaican spice mixes, you'd better be prepared for a "Spice Kick"...

i cheated used the a-1 marinade last night, it was really good.
i basted it with a bit to much very spicy

i am going to try it and not cheat
