Turkey Stock - No Scum
 
So I am making my turkey stock right now and it is coming out great. The only thing is no scum has risen to the top. I have never had that happen. Any ideas why this has not happened?

Scum? EWWWW! My soups never have any scum on them. LOL. Did you use a different temp or something this time?

You never have any scum rise to the top with your stocks Alix?

Any stock I have ever made has always has it. It is just protein rising to the top. I always just skim it every once in a while while the stock is cooking.

There was next to nothing to skim this time though even though I did everything the same way I always do. Oh well, I am not complaining :smile:

No GB, I don't usually have any scum rising. I have had it in the past, but not for a long time now. Not sure why that is. Kind of odd isn't it? Maybe its some weird tilt of the Earth's axis or something.

I think it has to do with global warming.

LMAO! Does that mean no scum if its warmer or colder? I'm thinking it would have to be colder since its about -21C here today!

Very odd, GB!! I almost always have a bit of scum when making stock too. I do remember one time I did not and it worried me somewhat. Made me wonder if the animal I was using might have been sickly. Not to worry though as everything turned out delicious and no humans were sacrificed!!!!
