TNT Laotian Green Prawn Curry

I came to see this Laotian Prawn Curry in my new cookbook - Curry. The curry is very Southeast Asian style - use a lot of coconut milk and the curry paste is similar to Thai Green Curry. The interesting point is this curry uses dill (also called Laotian Corriander) as garnish... My first time trying to use dill in curry and it tastes great.

Welcome to DC white poplar. Are you saying that the dill garnish lended some flavor to the curry dish without chopping it up as a seasoning? I know dill can be quite strong, so just a hint of it with your garnish seems to have added flavor. Your dish looks very appetizing! What is that pointed item on the right side of the dish ( sort of brown in color)? I didnt see it mentioned in your recipe.

Dill is eaten fresh as garnish not chopped up into the curry. I guess the reason is the curry spices are already a bit strong.

The soft brown color on the right side is the kaffir lime leaves, which have been simmering to bring out the flavour. Hope that helps!
