I've been experimenting with low cal frozen yogurt recipes and the ice maker attachment to my KA stand mixer. Here's a great recipe I've come up with that is very versatile. I've done fruit, as well as vanilla (with Vanilla Yogurt), or chocolate (use vanilla yogurt and choc. LF milk)...cinnamon (vanilla yogurt, cinnamon)....but the base recipe makes about a quart and is a total of 235 calories. Split between two people, that's a little over a hundred calories for a decent bowl of ice cream, not counting sprinkles, etc. Anyway, it takes about 20 to 25 minutes to make this if your basic ingredients are already chilled from the fridge:
  • 8 oz Dannon Light and Fit Yogurt (your choice of flavors)--80 cal
  • 1/2 c whole milk (80 cal)
  • 1/8 cup splenda for baking (45 cal)
  • 1/4 cup regular splenda (0 cal)
  • 1/4 cup eggbeaters (30 cal)
  • 1/2 cup mashed fruit, optional, to pair with fruit flavored yogurt (additional 30 to 50 cal)
  • 1 tsp vanilla
