ISO: Sweet Potato Pie Recipe

Ingredients::chef:
2 cups cooked mashed sweet potato
2 eggs or 4 egg whites, beaten
2 tablespoons honey
2 tablespoons blackstrap molasses
1 cup skim milk or yogurt
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1 cup flour
1/8 teaspoon salt
1/4 cup margarine
4 tablespoons water
9-inch piecrust

Thoroughly mix first 12 ingredients, then pour into piecrust. Bake at 400 degrees for 45 to 60 minutes, or until knife inserted in middle comes out clean.

I know that it has been a while since this thread was posted.....I've been busy!!!!!! I just had to share this recipe though because it is SUPER easy and I had never had sweet potato pie before trying this and I loved it! I especially liked it still warm! Here goes:

Sweet Potato Pie

1 1/2 c mashed sweet potatoes
2 c sugar
3 Tbsp. flour
1/2 c butter, not margarine
2/3 c evaporated milk
3 eggs
pinch of salt
2 tsp. vanilla
Stir all ingredients together in a large bowl. Pour mixture into 2 deep dish pie shells--I cheat, I use the Pillsbury 9 in. frozen pie shells! :rolleyes: I also place the pies on a flat cast iron "fajita sizzler" and bake at 350* for 35 to 40 min. or till pie is set.
