ISO ideas for left over smoked pork

Any ideas on what I can do with left over smoked pork (not pulled pork but just a smoked pork butt). We've already had sandwiches hoping to find something else to do. Thanks!
 
Soups?

What about adding it to a black bean soup or a split pea soup or a white bean chili?!
 
Make a potato casserole and put cubes of the smoked pork in it.

Pork fried rice...

Mixing it with a Mexican food wins my bet anyday.
 
Well, the two things I was going to say have already been said i.e., gravy/mushrooms/noodles or the scalloped potato idea. The black bean soup sounds like a winner too!
 
Being from U.P. Michigan, my answers would be:

1. add to baked beans (best answer)
2. Hot open-faced pork sandwiches with gravy
3. use in a hearty stew or soup
4. add to stir-fry
5. mix with scambled eggs
6. crumble and mix with finely diced potatoes to make hash
7. add to scalloped potatoes
8. add to fried rice with sweet grean and orange veggies
9. mix with salad dressing and sweet pickle relish
10. add your favorite bbq sauce and serve on a bun
11. use on pizza
12. use in fritata
13. enhilladas and tomales comes to mind
14. use in a food fight:devilish::-p

My other half, PeppA, always wants me to smoke pork butt specifically so I can make some Posole with the leftover smoked pork.

I've also made some pork enchiladas with leftover smoked pork. It was good!
 
chop it up and use it for nasi goreng or some other south asian style fried rice???
 
Thanks for all the great ideas. I just finished making posole. I made the green version. It was pretty cool, my first time using tomatilla. Thanks again for the ideas!
