I just made up my last batch of plums (jam) from last years crop.
I left my canning pot in Nevada and didn't want purchase another one.
I have roster pan but it is not tall enough to cover the 1/2 Pint jars.

I found another pot that would work but, I could only do 6 jars at a time.

My question:
Do the jars have to be standing upright in the sealing process?
Do they have to be covered with water?

I could have put the 12 jars in the roaster pan at one time. But, would have only been able to fill the warer to the bottom of the lid ring

Yes to both questions. They have to be upright, and they have to be covered with an inch or so of water.

Can you freeze the jam?

(And I know that grandma never boiling water processed her jam and she lived to a ripe old age.

She also never wore her seatbelt.

Maybe grandma was just lucky.)
