ISO recipes using coconut - cookies, etc.

Hey everyone! I was just wondering if anyone knew a really good recipe for cookies that involve coconut in some way. My friend loves coconut so I was looking for a good recipe to make for her. :chef:
 
Hi, shelia. First, welcome to DC.

Now to your request...I have a TNT (tried and true) recipe for something called Coconut Chewies, which are really, really delicious. I'm not physically where I can retrieve it, but I'll do it a soon as I can. I love 'em and always make them during the Christmas holidays.

I'm sure there will be many more responses to your query. Just be patient.

This may be similar to yours Katie..

Coconut Cranberry Chews
1 1/2 cups butter (3 sticks)
2 cups sugar
1 tablespoon grated orange peel (optional)
2 teaspoons vanilla
1 large egg
3 1/4 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups dried cranberries
1 1/2 cups sweetened flaked-dried coconut
In a large bowl, with a mixer on medium speed, beat
the butter, sugar, orange peel and vanilla until smooth.
Beat in egg until well blended.
In a medium bowl, mix flour, baking powder and salt.
Add to butter mixture, stir to mix, then beat on low
speed until dough comes together, about 5 minutes.
Mix in cranberries and coconut.
Shape dough into 1 inch balls and place about 2 inches
apart on buttered cookie sheet.
Bake in a 350 degree oven until edges just begin to
brown, 11 to 15 minutes. Shorter cooking time results
in a chewier cookie, longer cooking time results in
a more crisp cookie.
Cool
Note: The mixture may look dry until it comes together
as a dough. If its too crumbly to form balls, the dough
needs to be mixed longer. It should be a smooth homogeneous mass
 
sheilaw, it took me a while but i finally found a recipe for coconut macaroons that i posted a long time ago, buried in another thread.

My Mom always added coconut to the chocolate ship cookies she made; oatmeal recipe or like a Tollhouse recipe.
