Cabbage Apple Casserole

This is always a big favorite and a different way to think of 'ordinary' cabbage (which I love!)

Cabbage Apple Casserole
4 oz Bacon, sliced crosswise into 1/2 in pieces
2 tb Butter
1 tb Oil, olive or canola
1 Onion, finely chopped
1 Red cabbage, cored, coarsely shredded (about 6 cups)
2 Granny smith apples, pared, cored, diced small (can use other tart apples)
1/2 c Heavy cream
2 tb Brandy
Salt and pepper, freshly ground to taste

1.Fry bacon in medium skillet over medium heat until slightly crisp and brown, about 10 minutes. Remove to paper towels to drain.
2.Heat butter and oil in medium casserole or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
3.Add cabbage and continue to cook until softened, 3-5 minutes. Add bacon, apples, cream, and brandy and stir to combine. Simmer uncovered, stirring occasionally, about 10 minutes. Season with salt and pepper and serve hot.
