The other day James bought a lot of stuff to make sandwiches. I've mostly been eating roast beef sandwiches but today I wanted something different. This is what I came up with:

Spread guacamole dip on two slices of pumpernickel rye bread. Top one slice of bread with sweet onion, thinly sliced deli turkey, and a slice or two of Colby/Monterrey Jack cheese. Top with 2nd slice of bread.

I'm not normally a big turkey sandwich eater, but we both loved this.

Sounds wonderful Barbara. I eat it that way but with whole wheat bread. I'll try the pumpernickel rye bread.

Emmm Barb, that sounds so good...I think pumpernickle is my very favorite bread.
