Hi just a simple question what is the difference between pancetta and cubetti di pancetta does that mean cubed pancetta.

The most commonly sold form of pancetta in supermarkets are cubetti, which means as Loprraine said, cubed. They are italian style bacon, there are two variations, affumicata (smoked) and dolce (mild).
Pancetta can also mean a simple cut of pork not treated or salted like bacon, a fatty streaky part from midsection, from which, of course, the italian style bacon of the same name is produced.

The cubetti di pancetta is cubed. I've never seen it here, I usually buy a hunk of it and slice or dice it.
Loprraine,
If you have aTrader Joes nearby they sell the cubbed pancetta..I get it all the time for my pancetta biscuits..
