Kabec Mucveri (courgette fritters)

I'm being spoilt today and my mother made lunch for me!

I have got to share these delightful things, from Turkey...they could just have easily gone in the vegetable section. I urge anyone to try them, the sum is greater than the parts.....

1 large onion, coarsey chopped
3 tbsp sunflower oil
500g courgettes, finely chopped
3 eggs
3 tbsp of flour
black pepper
3 springs of mint, chopped
2-3 springs of dill, chopped
200G feta chesse, mashed with a fork
oil to fry.

soften onion in the sunflower oil til lightly coloured, and courgettes. In a bowl make a batter of the eggs and flour and pepper and herbs. Combine with vegetables. Pour half a ladle or thereabouts for each fritter in to a non stick pan filmed with oil and fry. Turn gently.

Its what love tastes like.;)
