Left overs from a good old fashioned New England Boiled dinner (ham, roast beef, or corned beef) can be chopped up to make a delicious Red Flannel Hash. My St. Patty's Day meal was cooked on the Oval this year. I took the corned beef, carrots, onions and potatoes, along with a can of beets, and chopped them up into a bowl. I then used the 'masher', just to get them blended and added some more black pepper. Into a frying pan with some butter to heat up.

Served the 'hash' (Red Flannel comes from the added beets) with some poached eggs, toast and some Kiwi fruit. Not overly healthy :rolleyes:, but a very good way to use up the left overs :-p

I agree - the Kiwi fruit blows the nutritional balance of this meal :LOL:

I wasn't all that hungry - was just going to have cream of wheat and toast ... but now .... ARRGH!!!
