Executive Chef
I just watched a television show in the background of my studying just for noise really. It was for Jerk Chicken that caught my ears. I've copied it down and want to type it out for anyone who'd be interested in doing this. I'll be making this in an hour or so for our dinner tomorrow as it has to marry overnight.
Oh, I am adding to it, so it's not plagiarism, just an FYI.
"The Chicken's a JERK"
Chicken pieces with bones, so I did 2 each: breasts/drumsticks/thighs
1/2 c brown sugar
1/2 c honey
1/4 c white sugar
5 garlic cloves
1 onion
1 t ginger
1 t salt
1/2 t nutmeg
1 t black pepper
1 t red pepper
2 t allspice
1 t cinnamon
2 habeneros, whole, YIKES!
1 c lime juice
1 T pineapple vinegar [available TJ's]
2 T olive oil

All goes in blender or food processor to combine.
Wash and pat dry the bird pieces.
Put into the marinade, cover with plastic and frig over night up to 24 hours.
OR in zipper bag/in freezer/in marinade/until ready to use. < That's what I did for a boat trip, took it all frozen to the lake and on the day, tossed it on the grill, oh my gosh!
This is where my recipe differs too. I take it out of the marinade, and place it in a buttered baking dish, alone, sans the marinade, then bake 350 until done, about an hour, uncovered.
