Banana Muffins

i love baking with bananas,be it cake,bars or muffins.well i was looking for a quick easy muffin recipe,and i came across this.i think its a winner.took me about 10 minutes to make and were extremely moist and soft.they were just lovely.so i thought i should share the recipe with you guys.This recipe makes about 8 muffins.

BANANA MUFFINS

4 large ripe mashed bananas
1 egg,beaten slighly
1 c sugar
1/3 c melted butter
pinch salt
1 tsp baking powder
1 tsp baking soda
1 1/2 flour

mix the bananas,sugar,butter and egg together.in another bowl,mix together soda,baking powder,salt and flour.mix wet and dry ingredients together.Do not over stir.pour into greased muffin tins and bake in a 350 degree oven for about 20 minutes.

They sound great Sarah! Next time try replacing the butter with applesauce for lower fat and calories....super tasty and moist! I love banana bread & muffins!!!
