I am in the process of opening a pizza restaurant in 3 months, I am planning to buy a deck oven, which one is better? gas or electric? please help me...

Have you looked into which is less costly to operate. Gas is significantly cheaper than electricity in my area (MA).
 
I helped open a pizza restaurant in '05-the owners bought a new gas deck oven-it revolved-once we all got used to sliding the pies while the decks were moving we were fine-easy maintanence-2 sides to open the door...best of luck!!!...Vegas has a big Pizza food show each year...my advice...go.:chef:
