I want to make a batch of cinnamon rolls this weekend and freeze them for about 10-12 days. I'll have them in a metal 9x13 pan.

Do I have them raise at all? I'm assuming not but want to double check.

What should I use to cover them with to keep from getting freezer burnt? Just foil?

Thanks!

I usually cover with plastic so that there is no air (less chance for freezer burn),then put foil on after so that it keeps better.

I just shape my rolls, put them in a greased 9 by13 inch pan, cover and freeze them. When I want them, I let them stay out on the counter to double in size and bake them.
