I have some asparagus marinating in a raspberry vinaigrette, I've cut some roasted chicken into thin strips, have a small red onion, cut in rings and a bowl of baby greens covered and waiting..There are some fresh raspberries to clean and then I'll add to the salad...I just blanch the asparagus and then cut into bite size pieces, marinate it over night and then add to the shredded chicken,which has also been tossed with some of the vinaigrette toss together, add the thin sliced onion rings,add more vinaigrette and put on the greens also using some of the vinaigrette..Everything gets it's own dose of the vinaigrette..When everything is combined toss about a basket of fresh just rinsed raspberries on top and now spoon what is left of your vinaigrette over the salad and serve..We just have a warm roll and butter with this and something cool to drink..For the vinaigrette..use2/3 cup of black raspberry vinegar I like Kowolski Farms,1-1/2 evoo,3 cloves crushed garlic,3/4 tea. dry or dijon mustard,honey to taste, I use about 2-3 TAb. salt and fresh cracked black pepper, whisk.
