Kumquats, how to eat?

I have access to fresh kumquats. What do you do with them? They look like little oranges to me, but if I have to peel the little things...hmm.

No need to peel. Actually the peel is the best part IMO. Just wash them and pop them into your mouth.
 
I like to cut mine in hald and boil in syrup for three or four minutes then add chopped apple. I cook for about 10 minutes until the syrup is reduced and the apples are tender then finish it with a splash of vanilla. YUM.

It's great by itself, as a tart filling, or over (vanilla or orange) ice cream.
