Leftover Pork Roast

I roasted a pork loin Thursday and have about half of it left. I would like to do something with it other than slice and reheat like I usually do. It was roasted in the oven with lemon pepper rub so it is fairly naked as far as flavorings go. Any suggestions?

My mom always made a stir-fry with leftover pork roast. You could also do pork fried rice. HTH.

Hot pork sandwiches, pork hash, empanadas. I love pork.

I like to dice up leftover pork and dice up a granny smith apple. The I make some red beans and rice. i use all of this to make a burrito.

I do have some tortillas here so I think I'll try a mexican thing with them. Maybe do enchiladas. I sometimes get stuck with one way to serve something and right now with finals this week, my brain is not thinking outside the box too much! Finals is not the time to get creative!
