TNT Tabuli Salad

Great refreshing salad.



1.5 cups cracked wheat (burghul)
1 bunch parsley chopped fine
1/2 bunch peppermint (leaves only) chopped fine
3 tomatoes chopped fine
Juice from 1 lemon
4 spoons olive oil
Salt and pepper

1.Wash & soak wheat until it’s soft. Squeeze water from wheat.
2.Add all ingredients and mix.
3.Put in refrigerator. The salad should be prepared few hours before serving.

Enjoy!
 
I also put cucumber, tomato, garlic. and red wine vinegar in mine.

suziquzie - I prefer the olive oil to be dominant (I usually use it generously, more than what's specified in the recipe) therefore wine vinegar out for me. It's a matter of taste though... thanks for your comment
 
Tabouli has been a quandry for me.

Used to work in a place where there were many stands about for lunch. One was a Middle Eastern guy who sold great food. He took care of his family and did very well, God bless him.

My coworker always wanted to pick up the tabouli and loved it. I could not stand the stuff he put out.

But then I started to learn about the product.

To me, the stuff at the stand had far too much parsley and other leafy stuffy. The taste of that overwhelmed me.

At which time I came up with a question. Is tabouli a salad of parsley and maybe some dill or other leafy stuff, with some bulghur wheat added, or is it primarily a salad based on bulghur with some leaves added in for flavor?

I go for the latter. What is the McCoy I have no idea.
