I'm making a salad for a buffet tomorrow - don't have much time.

Normally I'd buy fresh green, yellow and red pepper, and dice up a fresh onion.

I have used these frozen vegetables in hot foods, but never in a salad. Will they work or will they be mushy?
 
:dry:Well, dang, that's what I expected. Maybe someone will come along with a miracle idea.

I appreciate your responses, although it's not what I wanted to hear.
 
What else were you going to put in the salad? Maybe you can improvise?

It's a macaroni salad. I could change it completely, using cucumbers and tomatoes, or shrimp and celery, whatever. I want the ingredients decided before I shop which will be within an hour. I'm looking for efficiency.

The buffet is for a high school graduation. I volunteered to help a single mother. At first she told me there would be a reception for ten. No problem ,I thought. I can make all the food. Yesterday she changed the count to 75. Whoa!

I told her I'd take care of 25 hungry souls with the aid of brisket, potato salad, beans and a few appetizers. What she's going to do with the other 50, if they show up, is beyond me.

I haven't started yet and need to get my act in gear!
 
You could chop them up a day ahead of time and put them in gladware or something.....
