Ingredients: 1 medium sized whole chicken

Seasoning: half a litre of Soya sauce, 1 of large piece ginger, one teaspoon of Chinese prickly ash seeds (you will have to get the seeds at a Chinese supermarket, ask for hua jiao)

Preparation: Slice the ginger. Put the Soya sauce, ginger and Chinese prickly ash seeds into a bowl and then put the chicken in to marinate for 4 hours.

Cooking: Use a big saucepan to put the soya sauce and chicken in. Turn the stove to high and wait for the Soya sauce boil. Turn the stove to medium and cook for 30 - 40 minutes. Take out and serve on a plate. It should be soft enough to pull apart with chop sticks. Hao chi
