-2 tablespoons of curry powder
-3 teaspoons of chili powder
-1 1/2 teaspoon of ground turmeric
-1 1/2 teaspoon of ground cumin
-2lb of catfish
-1 ½ can of coconut milk
-1 package of frozen stir-fry
-1 ½ tablespoon of cornstarch
Directions:
-Heat oil on medium-high and once hot stir in onion and garlic and cook until brown
-Mix in catfish and seasonings (curry powder, chili powder, turmeric, cumin, and salt and pepper for taste). Pour in the coconut milk and mix in frozen vegetables. Cover and cook for 10-15 mins or until the fish is flakey and vegetables are tender.
-Remove ½ cup of the liquid and mix in cornstarch then return to the pan and mix well.
-Serve with your choice of rice and garnish with green onions for taste and a splash of color
