canneloni , this is for the tomatoe sauce on the canneloni , would a napoli sauce do.
 
If you are stuffing with a cheese filling I would use a hearty Ragu Bolognase. If it were meat, I would use a Marinara or what you suggested and with mozzerella melted on top of either or both.
Naples is marinara, Tuscany is sugo di pomodoro. They're all good.
