I was in the mood for potato chips, so decide to make some with the sweet potatoes. I have a 1 mm slicing disc for my food processor so it was easy to just peel the potatoes and run it thru the processor.
First I preheat the oven 450 degrees, peel the potatoes, run them thru the FP. In a bowl , toss sliced potatoes with 2 tablespoons olive oil . Also spread a thin layer of potatoes on a cookie sheet, sprinkle with salt, pepper and paprika. Bake for 20 minutes or until crispy. You can use smoked paprika instead of sweet paprika or even smoked sea salt.

These sound excellent, LC! I particularly like the idea of smoked paprika on the chips.

Yummy! I used to work in a restaurant where the chef seasoned them with a salt and cinnamon-sugar mixture of some kind. Maybe it had a little nutmeg too.

Anyone have any sweet-and-salty ideas about how I might replicate that?
