Need packed lunch ideas

I need some ideas for packed lunches, sandwiches or cold meals in containers..... They have to be nice though. Need a good one to make tommorow. A few conditions:

Good carbohydrates, and loads of them: Wholeweat bread/pasta. Brown rice. sweet potatoes.

A lot of protein....

Need something really special, to make me look forward to it more then the days best hot meal.

scalloped potatoes with lots of ham. Easy to make and great warmed up the next day!

I packed dh's lunch this morning and he received 2 large whole wheat dinner rolls, (if they had been for me, I would have split them and inserted a slab of Amish butter), a baggie of fresh home grown chopped carrots, and a sandwich made with ww bread, with a filling of homemade pesto and chevre, topped with fresh spinach leaves

Nice whole wheat bread with a little container of hummus spread. bring veggies to dip as well!
