This dessert is so yummy and healthy (look at the nutrition facts below!). I used all whole-wheat flour in the recipe. I like how it is so quick and easy too. I finished preparing in 15 - 20 minutes.
Applesauce Raisins Bars
(24 servings)
1 cup water
1 cup raisins
1 cup unsweetened applesauce
2 eggs
1/3 cup pure maple syrup
1/2 cup canola oil
1 tsp vanilla
1 tsp baking soda
2 cups flour, part of all whole-wheat
1-1/4 tsp cinnamon
1/2 tsp nutmeg
1. Preheat oven to 350 degrees. Cook the raisins in water until they are soft. Drain off water. In a medium bowl, combine the raisins, applesauce, eggs, syrup, oil and vanilla.
2. Combine the remaining ingredients and add to the medium bowl. Mix well. Bake in a nonstick 9 x 12-inch pan for 30 minutes. Cool 10-15 minutes before serving.
