Gray potatoes

I made a potato pancake tonight that taset great, but it looked like ____! It had turned gray inside.
The pancake was made of shredded russett potatos and shredded onion.
Ideas?

Potatoes are just like apples, they react to the oxygen in the air. If the colour bothers you then when you grate them sprinkle them with lemon juice to prevent the colour change. You can also put plastic wrap over them as you shred and hope that keeps the air off them. Or...you can just ignore the colour!

Keep the potatoes wet the whole time. Gray potatoes are the result of the air hitting the potatoes.

I do as callisto said, I always keep them in water till ready to use.
