Chicken and Dumpling Soup

Chicken and Gnocchi soup
3-4 chicken breast cooked and diced
4 cups chicken stock
2 cups milk ( can use 1/2 & 1/2)
1 stalk celery diced
1/2 carrot shredded or diced very small
1 clove garlic chopped
1 cup fresh spinach chopped (or frozen chopped and add desired amount to liking)
1 Tbl Olive Oil
salt & pepper
16 ozs potato gnocchi ( can be found in the pasta Isle)
2 Tbl cornstarch
Saute the oinion , celery, onion, garlic, carrot in olive oil over medium heat
until onion is translucent.
Add chicken, chicken stock, milk Salt & pepper Heat to boiling and add gnocchi
Gently boil 4 min then turn down to a simmer for 10 min
Add spinach and cook another 1-2 min
If not thick enough add water to cornstach stir and add to soup. stirring till thickens
 
they are in the pasta section of the store, they aren't hard per say like pasta is- they cook up up really quick. I don't see the fresh to often. I get these to have on hand never know when im going to use them. i sometimes toss them in beef stew. I forgot I use the mini gnocchis for everything.
 
I love the gnocchi you are talking about. They are vacuum packed I believe.

I like to brown these gnocchi's in butter then salt, pepper, toss in some shaved Parmesan cheese and call it lunch! I know...not a very balanced lunch...:pig:
