Game birds

Quick little back story...

I'm in a Culinary class, and I'm in charge of making the menu for my groups luncheon, which happens to fall on Earth Day. In leu of it being Earth Day, and my teacher's requirement of a theme, my group decided to go with earthy flavors.

So far our main course looks like this:

Focaccia breadsticks
Stuffed white mushrooms (as vegetable, so no meat in it)
________________

We need to fill in the blank, and we were thinking a game bird would be perfect for the earth theme. We're just having trouble deciding on which one, and our teacher is worried about the cost.

So, I come to you all. What is the best game-for-your-buck bird? Or, even, what would you make to compliment the earth theme?

Cornish game hen was our first thought, actually, but we're not really accustomed to any birds other than chicken (or to a lesser extent turkey). I figured I'd ask here (this website is wonderful, and the people are more than helpful :)) just to make sure there isn't something better suited for what we're looking for.
