Help with 2 recipes (quantities of ingredients)

I am trying to create recipes. Well I have no problem with ideas, but I need to determine the quantity of each ingredient in the recipe without being able to try it out before it's time to prepare (this is for my cooking school).

1st
Crostini w/ honey balsamic glazed figs, cambozola and radicchio
72 servings

3 baquettes, sliced 1/4 inch thick
Honey
Balsamic Vinegar
Cambozola
Radicchio
Olive Oil
Garlic

I was thinking of cooking chopped dried figs in a pot with honey and balsamic and reduce the liquid until thick. Then I will process the mixture with cambozola and spread on the crostini's. Topped with sauted radicchio (olive oil, minced garlic).



2nd
Fried wonton chips w/ avaocado, crab, chives, lime juice, tarragon
72 servings

Wonton wrappers (72)
Crab Meat
Avocado
Chives
Tarragon
Lime juice

Was thinking I could go 24/24 on the crab/avocado. Or go 32/24 or 32/16.

So I would fry the wonton wrappers into chips. And spread the mixture on top of each. Or I might even do a crab ragoon with this mixture.

Any help in trying to figure out the quantity of each ingredient needed would be greatly appreciated.
 
I wish I could help with quantities...I do better with the ingredients in front of me and just "going for it."
