Salami Pasta Salad

Salami Pasta Salad

10 oz. gemelli pasta
1/2 cup diced red bellpepper
1/2 cup diced green bellpepper
3-4 tbsp. minced garlic
2 tbsp. lemon juice
4 tbsp. olive oil
8 tbsp. grated Parmesan cheese
1 1/2 cups salami, sliced into thin strips
1/4 cup basil, sliced thin

Cook pasta according to package directions. Drain and rinse in cold water. In large bowl, mix all ingredients thoroughly and season to taste with salt and pepper. Serves 6.
 
Sounds good...couple of variations I use for that particular salad.

Use cheese tortellini for the pasta.

Also cut some cheese (your favorite) the same size as your salami, and toss with your recipe.

Here is a picture of my salad. I added the olives and I also added a bunch of green onion, chopped. Although, you won't see the green onion because I added it after I took the picture.
