When I am in a tight budget and want something quick ... :chef:

HTML clipboard Ingredients
1 each of large red pepper, green, yellow and orange pepper
1 tbsp dark soy sauce
1 tsp chili sauce
1 tbsp corn oil
freshly ground pepper
2 tbsp chopped fresh chives

Methods
1. Halve peppers lengthways, remove core and seeds, then halve again. Place in a roasting pan.
2. Preheat over to 190C. In a small bowl, mix together soy sauce, chilli sauce, oil and ground pepper and spoon over peppers, turning to make sure they are well coated. Roast for 30 minutes, or until softened, basting occasionally.
3. Transfer roast peppers to warmed serving plates, sprinkle with chives and serves.
